Miracoli
Pizza Cutter
In 1889, as King Umberto di Savoia was visiting Naples, he asked
Raffaele Esposito, the most famous pizzaiolo in town, to prepare
a special pizza for Queen Margherita. Don Raffaele came up with
a stunningly simple and successful idea. He just used fresh basil,
tomato, and mozzarella-a green, a red, and a white ingredient, a
chromatic hommage to the tricolore, the newly born Italian flag.
The Queen was delighted and gave don Raffaele permission to call
the novelty pizza Margherita. Monarchy declined, pizza submitted
to globalization. But Italians know that a good pizza is at home
on a royal table. Where else would you find a sterling silver pizza
cutter?
